The Traditional Cumberland Sausage is famed for its long coiled appearance, coarse texture and distinctive seasoning. The long coiled appearance and coarse texture is believed to date back to the 16th century when it is believed German migrant miners started producing sausages in the style of the long meaty sausages they were used to back home.
The spicy seasoning is attributed to the influx of exotic spices from the Americas through the Cumbrian port of Whitehaven in the 18th century.
Cumberland sausage would originally have been made from the indigenous Cumberland Pig which became extinct in the 1960's. Up until the 1950's it was common practice for householders to keep a pig as a means of self sufficiency. Every butcher has their own secret seasoning blend making their product unique.
